Distilled spirit from cycladic pomace
Produced from Monemvasia, Asyrtiko and Serfiotiko varietals. Pomace is collected from small vineries on the Cycladic islands. We ferment the pomace slowly and controlled under low temperature in order to maintain their primary aromas. The slow pace of the distillation (12 hours distilling circle) plays a pivotal role; over and above the precise separation of the heart of the distillate and the maturation for at least 6 months before bottling. The discreet aromas represent the Cycladic land. It is an awarded product from the international competition of Thessaloniki.
